Cheeseburger Mac & Cheese

I was cleaning out the freezer recently and I discovered a package of homemade hamburgers that we hadn’t used from Labor Day.  While they were still good, I didn’t feel well enough to go out and grill, so I decided to combine them with some of my creamy, dreamy mac and cheese, and you know what the kids actually ate it three days straight for lunch and dinner and a snack attack at midnight that my son doesn’t think I know about! LOL!  My oldest son Ryan even suggested we top our burgers with this next time I make some.  Of course double duty for Mom, but whatever!  I love to see my family happy so if they want a cheeseburger with cheeseburger mac & cheese, then dammit  they shall have it, because that’s the kind of stellar Mom I am!  Yes I am tooting my own horn.  I know two things about myself with absolute certainty,  I am a wonderful Mom, and a not so shabby cook.

This was super delish as told to me by my kiddos and they hinted this may be the new mac & cheese obsession!  So with that I leave you this yummy recipe to get your carbs on! Enjoy!!

Cheeseburger Mac & Cheese

  • You may be tempted to forgo the secret sauce, because I know it sounds funky in the mac & cheese capacity, but it is heavenly in this and completes the dish I promise.  I didn’t tell the kids it was in there until they were done eating and they loved it, not because they don’t love my sexy sauce for burgers but I knew if they thought about it for the mac & cheese they would start to think it may not work in the mac & cheese, but it so does!

Ingredients

  • Homemade hamburger patties here please, you need a flavorful punch before you attempt to call this cheeseburger mac & cheese, otherwise it is just ground beef mac & cheese.  I add a few things in mine, they make my burgers stand out.  If you don’t have a recipe keep it simple. salt, pepper, Worchestshire, a spoonful of mayo, and Montreal Steak seasoning, do wonders.
  • 8 slices of yellow American cheese (Land O’Lakes preferred)
  • one small onion diced finely
  • one garlic clove minced
  • 4 tbsp. of unsalted butter
  • 3 tbsp. of all-purpose flour
  • 1 cup of heavy cream or half and half
  • 2 cups of whole milk
  • 1 egg yolk
  • 1 tsp. of Worcestershire sauce
  • 2 tsp. of yellow mustard
  • 1 1/2 cups of cheddar cheese shredded
  • pinch of cayenne pepper
  • 1 tsp. of ground nutmeg
  • 1 lb. of elbow macaroni or your choice of mac & cheese pasta
  • Kosher salt and cracked pepper to taste.

For the Sexy Sauce

  • 3/4 cup of ketchup
  • 1/4 cup of mayonnaise
  • About 6 finely diced cornishons or gherkins
  • Kosher salt and cracked pepper to taste.

Mix all ingredients well in a medium bowl and set aside.


Directions

  1. In a large pot boil water for macaroni, salt the water well and cook according to package directions.
  2. Break up about 5 hamburgers into small pieces.  In a large skillet on medium high heat,  with a small amount of canola oil, add onions, cook until soft, add hamburger meat, and brown, add garlic and cook another minute to soften, add about 4 slices of American cheese and let it melt in with the meat.  Remove from heat and mix in sexy sauce.   Add in 2 tsp. of yellow mustard. Set aside.
  3. In a large sauce pan, on medium heat, melt butter, add in flour, to make a roux.  Mix about three minutes, then whisk in warm milk.  Whisk to thicken, add salt and pepper, Worcestershire sauce, and nutmeg, add in egg yolk, mix well.  Add in heavy cream, whisk until thickened.  Add in remaining American cheese slices and cheddar cheese and combine well. Simmer a few minutes stirring frequently.
  4. Drain pasta, pour sauce over the top of the mac & cheese mixing well to incorporate.  Serve immediately.  Devour!
